How do I set the open end of both sliding and bifold doors as it always seems to default to the left end in Archi 13

Peter:

It works like the swing doors: depends on which side of the door opening you gesture towards as you place the door in the wall.

You should add a Signature to your Profile (click the Profile button near the top of this page) with your ArchiCAD version and operating system (see mine for an example) for more accurate help in this forum.
