Does anyone know if I can set the opening angle on a double door to be different on each leaf?

FYI: I am using "D2 Metal 12" and/or "D2 Commercial Door 12"

No, not without altering the objects code in GDL and adding extra parameters.

The CadImage D&W Builder allows you to do this but it is an add-on which has extra cost which I personally feel is worth the money.

I had remembered looking at the CadImage suite before and knew that function was available somehow, just forgot how or where.

Looking at all of the functionality you get with the D&W Builder it seems like a great investment.
