You have two options, both involve making changes in the Work Environment.
1. Turn on the Model Panel for the Door's Settings dialog box: Work Environment > Tool Schemes > Tool Settings Dialog Boxes > Door Tool > make Model visible. You will then have the Model Panel available to uncheck the Override Surfaces option.
1. Add the Surface Panel to the Info Box for the Door's Settings: Work Environment > Tool Schemes > Info Box > Door Tool > make Surface panel visible (or if it is visible, move it up the list). You will then have the Surface Panel available in the Info Box to uncheck the Override Surfaces option.

You should add a Signature to your Profile (click the Profile button near the top of this page) with your ArchiCAD version and operating system (see mine for an example) for more accurate help in this forum.

<R>I am trying to change the surfaces of a door but no matter what I do they remain the same (in the first photo)

The settings are all changed but the door won't match the settings (in the second photo).

I seem to have lost the ability to make the door use surfaces that I have set for it. In AC18 I had the option to check or uncheck the "Surfaces: Enable Object's Surfaces" option, but seem to have lost that option in AC19 (in the third photo).

Any idea what's going on here?</R>

In the Info Box the Surface Override seems to be ON. Turn it off.
It is that button to the left of the Surface selection field, under the Opening Plane field.
When the Surface Override is turned ON all surfaces are shown with the specified Surface material no matter what you have set for the various components otherwise.
