What controls the 3D cut surface display of a building material with surface set to general when used in a composite/profile? For a basic structure it is the elements last used override cut fill foreground pen but that does not seem to be the case for composites/profiles which revert back to black when the override is turned off.

Yes, for composites and complex profiles you can control surfaces by BM cut fill and you can override all by GOs.
