all i have is metal, conc, and wood stairs

That tutorial is for Cadimage's Stairbuilder. It's a third-party add-on whcih you have to buy to use.

ok so there is stairmaker in 12 automatically which I found. they have options for circular and straight run. How you make a stair thats composed of various arcs?

You can make stairs from custom shapes too, check the help file. But with a number of arcs I guess it's easiest to create each arc individually. If you do a search in this forum (the Search button above, between FAQ and Memberlist, not the Graphisoft search field) you will find a number of various ideas.
