Sounds like you have the "invert pen colours' option active.
In the Work Environment under "On Screen Options" you will want to turn off "Automatic Pen Colour Visibility Adjustment for Model Views".

<T>Every time I place an object and put in a fill, the fill turns out grey and the object is filled with grey. I checked the graphic overrides in the renovation filter section and there aren't any overrides....? Is there somewhere else the selections could be overridden?

Thanks
I should also mention I can change the fill colour to any colour but white. But white is the fill colour I need

Your other option is not to use a white background.
I set mine to a pale green (just like the old manual drafting tables to remind me of old times).
That way I can see all colours as they should be (I avoid pale green pens of course) and I can see white as white and know that it won't print.
