There are all kinds of posts / tips available in this Community if you search for 'site mesh' or 'site terrain' (etc) - and on blogs linked from here. For example, Eric Bobrow has this video that might give you a good start:

http://www.shoegnome.com/2011/12/04/eric-bobrow-site-modeling-tips-it-gets-really-good-at-about-608/

Also Jared Banks video (and further links) here:

http://www.shoegnome.com/2021/10/17/in-this-video-i-look-at-a-variety-of-ways-to-build-better-site-models-in-archicad/

including this image-mapping post:

http://www.shoegnome.com/2017/05/19/archicad-site-models-images-meshes/

and this article about applying a image from Google Earth/Maps /etc to a site:

https://community.graphisoft.com/t5/Design-articles/Site-Modeling-with-an-Aerial-Photo-Surface-in-ARCHICAD/ta-p/303777

and some links/tips from James Murray here:

https://www.onland.info/archives/2016/02/site_modeling.php

Hope that helps!

Well I usually have topo information from a surveyor, or I use cadearth and import the terrain into autocad from Google Earth and then create my mesh.
