how do you trim the tops an bottoms of walls? for instance, I want these two walls to meet at a 75 degree angle

The tops and bottoms of 'basic' and 'composite' walls will always be horizontal.

However you can create a 'complex profile' wall and you can make them any angle you want.

You could even combine those 2 walls into a single complex profile.

Use Roofs.

not sure what you mean by meet at 75 degree angle, but you edit both the vertical angle of the a Roof and/or the angle where the intersect.

Something like this perhaps?

In any case, Roof are probably your best option. The trick it to edit the edges of the roof for the angle of connection that you need.
