Stucked in 30cm thickness in flooring seems could be tolerated (although so bother n annoying ), but how to make 10cm thickness canopy for my doors n windows if this tool can not be changed ????

You have it set to a composite slab fill. Composites have their thicknesses assigned in the composite manager. Only simple slab fills can change their thickness.
