When inserting a stair into the model built in the built-in stairmaker in archicad, how does one turn off the text that displays on the floorplan indicating how many risers and treads there are? Thanks.

This is one of those 'unusual' logic moments.

Turn on 'scale neutral symbol [this will give you just the outline of the stair]

Then turn on tread and arrow.

Turn Details on; however, they show only in 1:100 and larger scales. If you need it in smaller scale, turn scale sensitivity off.
