How can I control slab representation over different stories?
I need to set up different slab line types for projected and underneath slabs.

look in preferences for something like "construction items" (dont remember the exact description) and you can set a line type for storey over and storey below

Unfortunately, slabs don't have the full set of projected and overhead attributes available to walls and roofs and such. That global preference is all we have for now.

Would using a polygon wall instead of a slab work?

The first solution works just fine.
Options -> Project Preferences -> Construction Elements
Exactly what I was looking for.
