I have been struggling to set up different plan sheets with some difficulty. I am trying to create a sheet a furniture plan and import the plan with this layer set turned on. Also if I try to change the layer set in plotmaker this option is grayed out. I remember that I used to be able to change the layer combination in Plotmaker but now it seems I cannot. Help!

The correct way to do this is to define a view with the name you want in AC and configure the settings for layer, scale and view options. Then you import this view.
If you want to change the settings in PM then right click on the drawing go to the next to bottom tab "attributes update rules" and check custom settings and uncheck layers. Then you can change them in the "Attributes" tab.
Please post your AC version and OS platform as part of your signature so that it is easier to give advice.
