<T>When I dimension the length and width of a room, ArchiCAD automatically dimensions the wall thickness as well in addition to its length or width.... I am constantly selecting the wall thickness and deleting it--- how do I turn off this feature?</T>

Assuming you are still using version 18 as in your signature, that is probably because you are clicking on the edge of the wall.
Click on a node at the end of the wall or a corner instead and you will get just the one dimension point.

Or as you click on the wall edge and you get the 2 dimension indicators (the little target symbols), you can click on the one you don''t want and it will delete.
You don't have to place the dimension and then edit it.

I don't recall a setting in 18 to dimension just the one edge of a wall.
However, if you are using version 22 there are a few new dimension options, one of which will allow you to do just what you want.
