In each drawing that you place on a layout, you can control the pen set to be used and if you want to want it to use its own colours (defined by pen set) or convert them to greyscale or black and white.

You can also control it in the document options in the publisher.
But I find it best to adjust the drawings on the layouts.
What you see on screen is what will print.

I also have duplicated my coloured pen sets and changed the pens I want to black or grey (leave the white pens as white so they don't print).
I sometimes leave some pens as coloured.
I set the drawing to use these new pen sets and leave as "Define by Colour'.
That way I get black and grey prints with a bit of colour if I need it.

I have been using Archicad for almost 10 month, but still have naive questions.
I understand that all the pen configuration is for ease the view of the projects during modelling. But what about printing. how can I keep the visualisation set up color and then print in black and white and/or select some pens to be printed in gray or in any other color.

I've just duplicated the "General" set of pens across all the colours, then added the lighter greys 250-255 at the end and have so far found it works well enough.

if you are publishing to pdf you can in the publisher under document settings set the publishing to black and white. This works fine for me. you have to have the document highlighted to get access to the document settings.
