<R>I am wondering if there is a way to change the colour when you ask to set your "Show Cut Fill Contours Only" solid? I know the default sets everything to black, but if there is an easy way to control this that would be a great benefit.</R>

easy
it's the pen that you've assigned the fill to have in the first place... ie whatever the fill pattern is, if the fill colour is black then turning it into solid from the view model option it will be black... if red then... well red!
There's no need to change all your composite fills itself.

See Wall Selection Settings > Floor Plan and Section > Cut Surfaces > uncheck Cut Fill Pen and make it a different colour.
