How do I get the stringer to finish vertically at the top & not short as in the screen shot & how can i make the stringer at the bottom finish horizontally, so it runs straight into the floor & is cut on the horizontal plane?

In the Stair Settings > Structure > Flight-Stringers > Support Endings and Connections there are options for the stringer ends.

You have 2 options in the stair settings.
End with riser or end with tread.

If you end with riser, then you will have to model the nosing on the upper slab (landing) yourself.
If you end with tread, then it will do the same as all the other treads.
This is fine if you have a tread in front of your upper landing.
If you are using the landing as the final tread then this doesn't work so well ass you will see this last tread in plan as well.

One option is to end the stair with a tread, as Barry shows, then edit that tread so it is only as deep as the nosing.

I always forget that you can stretch the back of that top tread.
