Is there a mode to manage the stair width graphically?
It would be very useful.

You're right! Some of the main parameters should be graphically editable.

Yes, it is possible to do.
Select either Boundary of the Stair. If you hover your cursor of the Baseline of the Stair you can press the TAB key to switch to the Boundary of the Stair and click to select it. On the other Boundary of the Stair you simply click to select it.
When the Boundary is selected you will see two thick lines on the two Boundaries.
Now click any of the Corners of the Boundary polyline on the side you wish to change the width of the Stair on. From the Pet Palette, select the "Offset All Edges" command and modify the width. The width of all Flights of the Stair will be modified.

This does modify the stair but it does not alter the stair width as set in the parameters, which I think is what mariosmic is wanting.
Therefore the walking line needs to be manually adjusted as well.
And yet oddly enough the tread numbering moves with the boundary.
