i have a general question about how to handle stone elements in order to have a stylish architectural floor plans sections and elevations
so what is the best practice and workflow if u have stone surfaces in a project..u make ur custom fills and apply them in the structure of the wall in order to be updated in all plans or to add them as an independent fill
any thoughts and practices to have similar architectural plans as in autocad for example where u can play with different hatches or opacity to give depth etc or to have diffent fills forin cutting elements and projected surfaces
for e.g. this facade or similar architecture

Have a look at the stonework surfaces that are in the standard template.
They have a surface texture image that you can see in 3D and renders.
As well as a hatch pattern (fill) that you can see in elevation.
So no need for separate fills, unless you really want to.
You might be able to load more surfaces from the surface catalogue or additional surface catalogue if you have access to that.
Or you can create your own.

Beside the suggestion by Barry Kelly I can say that generally is good to model the stone cladding separately for a better control of the height of the cladding, of the distance from the supporting wall, etc ... In this way you can consequently control better the quantity take off.
