Is it possible to replace a slab with a roof element in Archicad to create a sloped surface, while keeping all associated data, such as labels, solid element operations (SEOs), classifications, and any linked properties?
I need to model a sloped slab, so I’m considering switching to a roof element, but I’d like to avoid losing any information already linked to the slab.

No.
Workaround is to create the roof and relink dims, labels etc before deleting the slab.
You can try using try using "transfer settings" for Classifications and Properties but it might just be easier to do it manually.

You could also try modeling a Roof the bottom of which would be at the desired top surface of the Slab, and use the Roof as an SEO Operator to subtract the top of the Slab. That way, you will have a Slab that has a sloped top surface, and you still have all that associated data.

so tricky a trick! but why so many years GS not develope a function when the user tick a function called "slope floor", then the slab can input slope value.

That is always a good question the GS Product Team is facing constantly: which tool/function/feature to implement.
There is actually a wish about Flat Roofs:
And there is another one about unifying the Slab and Roof tools:

You can vote for either of them to show your support.

The wish is close, I can'nt vote anymore. I think the vote is closed.

The two above wishes are still open, but you have to have SSA/Forward or a Subscription associated with your profile to be able to vote:

OK then. Unfortunately, my licence ended in June. I am looking forward to see the improvements in this function.

I doubt this will ever happen in a hotfix for the current version.
It means a revamp of the slab tool (or a completely new tool), so I am guessing it would only be in a future version for which you will then need to re-new your licence to see it.

I doubt too. Given the current attitude of GS, rewriting a fundamental feature like the floor slab is basically impossible.
