I can change the height of the whole sandwich.
But I can´t change the height of each layer separately (down or up). Why?
Please, apply this for the walls, roofs, plates (floors) etc. Apply for all directions (cuts and groundfloor). Thank you very much. Using the own profile is not user-friendly.

You need to use the Complex profile and use the offset modifiers.
Check this video (vertical offset modifiers starting at 19:20)

I watched that video several times and still had many problems trying to get my complex profile to adjust and behave. It definitely shouldn’t be so hard to create and edit a complex profile in AC. GS please make it easier for us all.

Having multiple fills all touching each other can be a bit of a challenge, but if you are careful and use the TAB key to cycle through the fills, you should be able to connect to the edge you want.
A little trick I use is to pull the fill apart slightly so there are gaps between them.
Then I create and place the modifier for the skin I want it to control.
I can then link the same modifier to the edge of what would be the adjacent skin, but because there is a gap, there is no need to TAB.
When all of the modifiers are created and linked, I re-assemble the fills so they are all touching each other again.
The modifiers will remember what edges they are linked to and will move with the fills.

Of course it is if you set it up properly.
This is all the same exact same complex profile I have stretched a bit to show some of the modifiers.
Can be stretched in height or width.
Various skins can be stretched to zero dimension to turn them off.
