how to rotate a model in the layout so it matches real life orientation? I would like to keep on modeling the project orthogonally, but would like to represent it with the north up on site plan layout.

I wrote quite detailed explanation in manual to my template about it. Take a look on the page 35.

After you placed your topographic map on separate worksheet and set the north, use trace and reference to show topographic map on the floor plan, then rotate the view that north would be on top. Save the view as site plan or similar. So you will get two different views - one for site plan with true north and your architectural plans oriented orthogonally.
