The 2 panel door is correct.
Don't forget there is usually a handle/locking device on the opening panel, so it can not slide completely behind the other panels.
That is not to say you may be able to get doors with some sort of concealed handle, just not usual in my experience.
The same will happen for the 3 panel door, the end panel can't go all the way behind the other 2 panels.
It should open more that it does in your images but I can't say why it does or doesn't as I don't use the standard library objects.
