Graphic Override advices

I would like to make all drawing in black and gray colour, just text, dimension, label and detail and worksheet markers in own colour .
All changes made by Graphic Override option
How to mange Interior Elevation marker contour line and text colour? See attached drawing.

In my experience it's more flexible to create a pen set for plans like this.
I prefer it that way to have better control over drawings.

Graphic overrides are most suitable to highlight or colour elements based on properties, fine tuning graphics solely with them is hard. What's the problem with creating a pen set?
