If your gutter object does not have the option for a stop end then cut a section through the gutter and trace the shape with a fill.
Use that fill in the Profile Manager to create a wall or beam profile and then add a very short (say 1mm long) wall or beam at the end of the gutter.
You don't say what version of Archicad you are using.
If 16 or above then you could also turn the gutter into a Morph and create a face at the end.
In fact you could just create a flat morph on the section of the gutter and then move it to the end.
