Wall types: schedule with plan view?

I'd like to create a schedule that shows all the wall types in a project in plan/section view, that we can add text and line work to. Is this achievable? Similar to the attached image. We've been doing "dummy" wall and floor types since the beginning of time.

A superior program like ArchiCAD should be able to do this?

No.
You can use Masterscript's object Label Everything to achieve this in floor plans and in sections (Depository> 01 General > Custom Labels).
There are labels that can be loaded with text to describe the wall so you don't have to add notes to the details every time. You have the labels in Favorites and just dbl click on it to change the notes that are displayed for the wall type.

Of course the label does not redraw the arrows going to each material but they are not that useful anyway. Does the person you are making the detail for really need you to draw an arrow to point out the siding, wall sheathing, insulation, and drywall? No. I think more often than not arrows just clutters up the detail.

For those times when you don't need the arrows you might be able to get buy with a label form your Favorites.
