Is there anyways to clean this 'staggering' look ?

Also, is there a way to select and delete just a section from a 'multiple' dimensions line ? I've been spending quite a bit of time to re-re dimensioning...

The staggering is automatic when the text can't fit between witness lines and still be clearly read. If it didn't do this your dimensions would read 1'0"1'0"1'0". You can drag each dimension text element individually if you want.

Also, to delete a single dimension from a string you can select the midpoint of the dimension you want to remove and hit Delete. This will break the dimension into two strings. If you want to take out just one witness line (and still have a continuous string) select the dimension's node at the arrowhead. See example below.
