Breaking Contours of a Mesh

I have a contour that bends three times.
I want the middle segment to be gone.
So if it were a poly line I would hold ctrl+click and then I would have two line segments with a gap between them.

How can I do this with a contour?

Create a hole in the mesh that straddles the ridge
segment you want to delete then delete the hole.
