Exterior walls - Full height or per level?

I'm used to working in another program so forgive me if this question seems foolish.

Is it better to run my exterior walls from footer to roof plate or create an exterior wall at each level? What are the benefits of either?

I always feel it is best to model it the way it will be built. If the wall is a multi-story ballon frame wall, then just do one wall across multiple stories, if you building will be platform framed, then one wall per story.
