With the profile editor open, select fill from the side menu and pick your fill material from the top info bar. You can now draw a fill that will extrude in your model once the profile is saved.
Apple iMac Intel i9 / macOS Sonoma / AC27UKI (most recent builds.. if they work)

Okay. I can access different fills now. I get more fill options when I click override for some reason though and when I draw the fill, it is still showing up invisible.
I am going to have to compare this ArchiCAD to the one I have at home. Mabye there will be my answer.

The one at home works like it should. I think something is wrong with the template settings.

Since AC17, you apply Building Materials to fills in the Profile Manager.
With Building Materials, Surfaces are assigned via the Building Materials Settings dialogue.
In the Profile Manager palette, when a fill is selected, you can choose to use the surface from the Buildign Material (which is the checkbox) or override it - and the override can be all edges or individual edges (via clicking on an edge of the fill and select the option from the pet palette). Therefore this popup in the palette is a Surface override.
I hope that clarifies.
