Is it possible to schedule a COUNT of zones and not get a list of each zone?

Sure.
As your criteria just search for element type is 'zone'.
As your field just use 'Quantity'.
Make sure you 'Merge Uniform Items' and you will have a count for the total number of zones.
Or are you actually after something else?
