I have downloaded, installed and have been working on the 32-bit version of AC15 for windows. When I originally installed the software I was using it in trial mode but I have since received a key. Can I install the 64-bit version and still be able to access my files?

Assuming you mean a hardware key...

Yes you can run any (recent) version on any platform with the key.
