I am having trouble figuring out how to build a roof over my head. The rain and wind is really cold and bird poop is ruining my furniture, please, would somebody point me in the right direction for building a roof?

RTFM.
Admittably, I'm not too swift, but it took me awhile to figure out what that meant.

I'm not sure how to explain this, but here goes...I think that it is consider a Multi-vertex Rooftop. It's however you roof a U-Shaped home? I am just completely lost on how to begin a roof. Is there Tutorials that a beginner will understand offered anywhere? The help menu offers tutorials? I know I sound like a newb, but I AM! Someone please help me?!

I draw your attention to the US Version Reference Guide accessed through Archicad's Help Menu.

Specifically pages 201 - 210. Of particular interest to users needing irregular roofs, the POLYROOF described on page 202 is probably most helpful.

Archicad Training Guides can be found through the HELP Menu at:

http://www.graphisoft.com/products/archicad/ac11/ITG/

I suggest the Basic Interactive Guide and scrolling down further to "Modeling".

If you post an image of what you are attempting or even the walls shaping the base, help will be quickly forthcoming.
