Is there any way I can hide the Bifold Door in my floor plan, as I would like to use the fill ones I've drawn in blue?

If you only want it to disappear in the plan, you can simply change the "contour pen" to a white pen (default is no. 91).

If you want it to disappear in other views as well, change the panel to empty.

Both settings are on the Door Panel tab (on different sub-tabs)

Thanks Jere... Is there no way to place doors/windows on separate layer?

Doors and windows don't have their own layer.
They belong to the wall they are in.
So the only way is to put the doors in a wall whose layer you can hide.
Probably not very practical.

Some doors also have an option to hide the 2D display.
This will be in the parameters somewhere if it exists for that door object - it may not be there.

Thanks Barry..

There doesn't seem to be an option to switch off the 2D element on this particular door, so I've taken Jere's advise and turned the 2D Representation of the Leaf Contour Pen to 0.00mm White
