I'm messing about with a zone stamp and want a help file that details how the data types and functions I find in this type of GDL work.
Anyone point me to a detailed GDL help file?

This is really a question for the Library (GDL) forum.
GDL is documented in the PDF GDL Reference guide, as well as (surprisingly to many) the Basic Library and Library Developer Kit:

Beyond those, study the code of all of the available zone stamps as examples.

At www.selfgdl.comyou find all global parameters. But in German. At the end of ech descripton you will find a link to Laszlos "Zone_Fix_Parameters" manual in English.
