And if that doesn't cut it, you could always leave the SEO there and just insert a short empty opening the same width as the SEO, so it shows up in plan.

Looks to me like the arch is not exactly an "arched opening" in a super-thick wall. If it were, it would probably show up OK on the floor plan with the wall displayed as "symbolic cut." It appears that you're using some sort of curved roof object to make the arch and/or using solid element operations to produce the archway. That's cool and all, but in plan view it would probably produce a result like in your second image.
Though I wouldn't recommend this universally, you could try raising your cut plane to 4' or 5' to see if it shows up....
In any case, if you haven't already done this, I would suggest that you model the wall that the arch is in as being 6' thick (or however deep the arch is) and insert an arched opening (it's a door type) into the super-thick wall.
good luck

Unfortunately neither the arched window opening nor the arched door opening allows you to specify the spring point of the arch nor the radius - or if it does, I don't know where to find these. Also, it doesn't show the thickness of the masonry arch - it's really an outline opening.
