What is your AC version, and which library are you using? May vary between versions. It is generally a good idea to include this information along with some general computer info in your signature.
Regarding the "<Custom Text>" it is most likely found under your Door Stamp Settings which you will find in one of the drop downs below the general Door Settings. Stamp visibility and content may vary depending on your MVO and the scale at which you are viewing it.
