ArchiCAD automatically calculates the required angle for the ramp to reach from one height to another based on the ramps length etc.
So if you want to adjust the angle yourself then either change the angle value in Thread settings in the Stairmaker toolbox or construct the ramp manually using Complex profiles.

Although not a direct solution, but you can simply use the roof tool for the ramp which gives better control of the angle/percentage and a slab tool for the landing.

you can incline the railing as per the ramp slope check for the inclination angle.
