Is there a way to reduce the polycount of a slab?
When applying a fillet to the slab, the polycount is too high for my liking.
Is there any way around this?

I don't think there is much you can do.
The size of the fillet (radius) seems to affect the number of polygons - the bigger the radius the more polygons.
But it is rather small in the scheme of an entire model.
Also if your slab is a composite, you will increase the poly count for each skin in the composite.
For example a rectangular slab has 6 polygons.
A composite rectangular slab with 3 skins will have 18 polygons.
