I thought that perhaps rewriting the key number (ie.<Custom21>) in XLM might fix it but this does not work as ArchiCAD just rewrites the custom number. My current suspicion is that the issue is in the <DBKey> that ArchiCAD assigns. Does anyone know how to fix this?

I am seeing that one sort method is the order that they were created (default fields first followed by custom fields), the second is all field names in alphabetical/numerical order and the third is all values in alpha/num order.
So the only control you have is to re-name your custom field names (you can't rename the existing ones) or the values of all the fields.
Otherwise you should be able to get them back in the order that they were created - default fields first followed by custom fields in the order they were created.
I'm not sure if saving then editing an XML file then importing it will have any effect.
Certainly not as far as sorting by the field name or filed value - as they can be edited in the project info box anyway.
But maybe playing with custom filed number will sort just the custom fields.

When I sort starting from my input order, I get the alphabetical order, the third order which is not the entered or alphabetical, and then back to the input order except some of the field jump out of the original order and will not got back. Perhaps this is a Mac issue. Can a mac user test this out (use a non-working file incase it messes things up).
Editing the custom value in the Xml; does not appear to have any effect. Archicad simply overwrites your values. Perhaps if I know the <DBKey> code.

This is what I am seeing and although I don't actually use Project Info much I have opened and closed this and the ordering is staying consistent.
Can't think what would mess it up.
Order of creation

Barry is correct. In AC15 you could sort Project Info from the column headers, but when we redesigned the UI in AC16 the sorting feature was lost (because of the groups). We re-introduced sorting (to cycle between these 3 methods via the group header) in AC17 based on user feedback.
