does anybody knows how can a mesh be splitted into different parts?

There are 2 ways...
1. Use the split tool to create a cut line.
2. Move one of the boundary nodes to outside of the opposite boundary... Like splitting a blob...

using the split tool I can create a line. the problem is that I want to split the mesh using a polyline.
Can I use, in a way, the split tool by creating a polyline??
The second way does not keep the shape of cut mesh.

No. Only straight cut lines are available.

But before you start making final cuts this way, you might explore the SEO options. You can easily make a polysegmented cut by using for example a hidden slab with a segmented face, or a segmented wall, as subtraction operator. And this operation can be reversed or changed at any time!

You could try closing the polyline, then magic wanding a subtraction out of it. If you wanted to keep the separate parts, you'd have to copy the mesh first and repeat the process for each side.
