Dear @alexdantec,
I can suggest several things which might be helpful.
Check learn.graphisoft.com for the available online training courses on french language.
Archicad User Guide (also accessible from the Archicad's Help menu as @Barry Kelly mentioned) might have more structured way to search for specific manual and explanations of new features: https://help.graphisoft.com/AC/25/FRA/index.htm#t=_AC25_Help%2F001_ACHelpIntro%2F001_ACHelpIntro-1.h...
(for language or version number switch, you can simply change the language in the upper right corner or a number of Archicad version in a URL - for earlier Archicad versions).
I also know a published book in France: "Archicad objectif BIM", which might be very helpful, author is a highly knowledgable Archicad master, Til Breton.
I found it on Amazon: https://www.amazon.com/Archicad-objectif-BIM-lesquisse-r%C3%A9alisation/dp/2212675801
but here you can check the extract of the book here:
https://www.editions-eyrolles.com/Livre/9782212675801/archicad-objectif-bim
Hope this helps!

You are here already. 😀
Please feel free to ask your questions.
But please say what version of Archicad and operating system you uses when you do - answers can depend on this information.
Best if you add it to your profile signature.
Please make your questions as clear as possible and make separate post for different questions to help keep things clean and readable.
Attaching images helps greatly as well.
Have a look at the ... 'Setup & License > Lets Get Started!' section of this community.
In particular ... https://community.graphisoft.com/t5/Let-s-get-started/Archicad-Quick-Tour-Series/ta-p/335523
and ... https://community.graphisoft.com/t5/Let-s-get-started/Archicad-Basics-Series/ta-p/336248
There is also the Graphisoft Learn portal ... https://learn.graphisoft.com/
Some of it is free, some is free if you have a Select Service Agreement, and some you need to pay for.
Barry.

I don't know that there is any particular manual or book.
There have been a number of books written over the years (as you would have seen in another very old post you asked about books in).
There were a couple mentioned there but they are well out of date.
The best resources are the tutorials you should find links to in the links I gave before.
These will hopefully be more up to date.
I haven't been through them but I am sure they will mention the Archicad YouTube channel where you can find many videos on specific tools and features.
If it is not in those links then just go to the HELP > Online Resources menu in Archicad.
The absolute best training is to have someone show you.
Then you can ask specific questions to your needs.
That can be a bit tricky if you are not part of a company with other users.
Personal training can be expensive, but if you are doing it to run your business, it is a worthwhile expenditure.
If you work for someone else, try getting them to pay for training.
If you are a student, try getting together with other students.
Barry.

and if you are located in France, you might find some courses or other useful information for yourself on Abvent's website, Graphisoft's distributor: https://abvent.com/index.php?site=fr

the previous forum was structured in a way that fostered self learning as it was organized in significant topics and subtopics that were useful to many skill levels, from absolute beginners,to expert users... this new forum unfortunately lacks all of that, but you will still receive help if needed
