any idea, if they have worked on tab undocking (to another display) for the windows version ?
making it equivalent of a mac version.

How does the new stair tool treat stairs created in earlier versions? Will we be OK to convert older files to ArchiCAD 21 format without breaking stairs previously modeled?

They will become objects that open with the object tool rather than the stair tool - but they will have all the options they had before.
You just won't be able to create new stairs from a fill and lines as you did before - you will need to use the new stair tool.

No changes that I am aware of.
I think it may be a Windows OS limitation rather than an Archicad one.

You can stretch the main Archicad program window across both monitors and this will allow the undocked tabs to be moved from screen to screen - but that is not a great solution.

Does AC21 have any changes to the "Linear Dimension Settings"
(as in, the addition of "Dimension Origin")?

That doesn't make sense to suggest that this is a Windows OS limitation.

Lots of graphics and CAD programs are fully multi-monitor display capable within Windows, including no less than ArchiCAD's own Nemetschek sister BIM program in Allplan which has been multi-monitor capable for the last 2 versions already (since the 2015 version, I believe).

I imagine the programming it would necessitate to allow AC to accommodate this or to work in this fashion is not insignificant so much so that it's probably likely a multi-year development (if not complete overhaul of the graphics kernel) - assuming GS even have any plans at all to ever have ArchiCAD to be multi-monitor capable any time in the future, that is.

Windows wouldn't be the limitation in this case.
Nor would hardware, given the power of modern Graphics cards and GPU's.

Similarly, there will be a way to use Profiles defined in the Profile Manager instead of having to script them in the 3D Script of the given GDL Object (if I understand correctly).
There will be several new REQUEST commands in GDL using which you will be able to get the data about the geometry and components of Profiles in GDL so you can use them in various commands. For example, there will be a new TUBE command which can use profiles.
