There are more ways that lead to your goal. You can set your Favorite options for windows, as ejrolon wrote. Or you can simply change the pen colours to black and save it as your own set. The set can be imported in a new project through the Attribute Manager.

Both replies are correct, each method has advantages:
Changing the pen set will globally change every use of that pen in all of ArchiCad. All library objects and building elements that use that pen will also become black.
Using favorites will only change that item.
A third way : Change the placed views in layouts to "black and white" vs "defined by pen set". I find the pen colors (unappealing as they are) help me sort things out when I'm working in the model, but I am used to seeing my "sheets" in black and white.

Now I've made a new penset for the first time in my life. And I think that was a very good and quick solution to my problem. So thanks to everone for all your help.
