Can some please explain how I can get another gable to display here properly? See attached.

You could extend the reference line on that side outward from the wall. The extent of the roof can then be pulled back to where it should be. The issue you are having is that AC will not allow two gables to share a node, so you have to create a split at the common corner.

Model an extra multi-plane roof for the gable and trim (connect) it in.
Or my favourite is to use single roof planes and you can do whatever you like.
Just add a plane and trim it to the others.
