Currently, I'm having to:
1) Find the current view in the Navigator or Organizer, and rightClick on it
2) select "View Settings"
3) Click [Get current window settings]
4) Click OK.
I can't seem to find a way to allocate a keyboard shortcut to the process.
There's "Save View and Place on Layout", but I don't want to place it on a layout.

I don't think there is a shortcut possibility here.
But it is a great wish, you should create one, I would definitely vote Essential, I myself have many times wished it would be easier to redefine Views.
