When opening a project from the file explorer, is there a way to get it to open by default in any inactive, no project open, instances of ArchiCAD? I often have 2 or 3 instances running but they aren't always all active and it saves time over launching new instances. I currently make do with drag & drop to open projects, but sometimes forget and have to through the whole launch sequence...

As far as I know drag and drop to an open but empty Archicad is the only way.
Otherwise if the file is in the 'recent files' list you can open it from within the running Archicad.
