What you can do is you can draw ridges and set their height.
So if you want to see a given ridge, place it into the Mesh explicitly.
Those will take precedence and ArchiCAD will triangulate the rest.

The minimal solution might be to put one or two points in the middle of the flat area. This should force the triangulation you are looking for without adding visible contours. As I recall th trick to adding single points is to draw a single linen segment as a contour an then drag one endpoint onto the other.
