There are two ways that I can think of.
The easiest is to create a separate roof and then "Connect" the two together.
The other way is to creat a second level in your roof and then you can turn the bottom level on some of the roof planes into a gable so effectively they disappear.
Either way so long as you don't want the lower roof to ever lap under the higher roof this will work.
If you ever need the roofs to lap over each other then you will have to convert to single roof planes and edit as in the old days.
