The pivot line of a multi-plane roof can only have one elevation.
However you can set multiple planes to your roof and hence have multiple pivot lines.
You might then be able to change certain roof planes into gables (vertical) essentially hiding them.
But even without seeing your roof I can imagine this will get very messy.
Just work with single roof planes (get the multi-plane roof the correct shape and then split it into single planes).
You will have to manually trim the edges together, but that is quite easy.
I find that as soon as you have roof overlapping other roofs, you get better results with single plane roofs.
