In the Components-Selected area of Profile Manager, there is a choice to Override Surfaces. In that panel they have a radio button for Various. The manual says that you can use it to override an individual Fill edge - but I can't find any documentation about how you do that? Anybody know how this might work? Thanks!

You should use the pet palette. Select a fill and click on the border line you want to change.
